How to make perfectly white buttercream

Creating a perfectly white buttercream can sometimes feel like a daunting task, especially when dealing with butter that naturally has a yellow hue. But fear not! With the right techniques and tools, you can achieve that pristine white buttercream ideal for any cake decorating project.


Creating white buttercream by either of these methods:


Method 1: Mix Titanium Dioxide with Water: To start, you'll need to create a whitening mixture using titanium dioxide. Titanium dioxide is a white pigment commonly used in food colouring to achieve a bright white color. Mix titanium dioxide with water in a 1:1 ratio. For example, if you use 1 tablespoon of titanium dioxide, mix it with 1 tablespoon of water. Stir until fully combined and smooth.


Add the Whitening Mixture to Your Buttercream: Slowly add the titanium dioxide and water mixture to your buttercream. Mix thoroughly to ensure even distribution. The buttercream should start to lighten in colour.



Method 2: Add Ingenious Edibles Whitener: Add Ingenious Edibles Whitener to the buttercream. This product is specifically designed to enhance the whiteness of your buttercream. Follow the instructions on the package for the appropriate amount based on your buttercream volume. Typically, a small amount goes a long way.


Method 3: Introduce Colour Mill Purple:


To counteract any remaining yellow tint, you'll use a small amount of Colour Mill Purple food colouring. Purple works well because it is the complementary colour to yellow, effectively cancelling it out. Add just a drop or two at a time, mixing thoroughly after each addition. Be cautious not to add too much, as you want to neutralise the yellow without turning the buttercream purple.


Tips for Success:

  • Always add the whitening and colouring agents in small increments to avoid overcorrecting.

  • Ensure all ingredients are at room temperature before mixing for the best consistency.

  • If you're working in a warm environment, periodically chill your buttercream to maintain the right consistency.


Achieving perfectly white buttercream is not only possible but also straightforward with the right techniques and ingredients. By using a combination of Ingenious Edibles Whitener, titanium dioxide, and Colour Mill Purple, you can neutralise any yellow undertones and create a pristine white buttercream ready for any cake masterpiece.
